Coachbuilt Fashioned

INGREDIENTS

  • 50ml Coachbuilt infused with grilled pineapple
  • Long pepper
  • 10ml Simple Syrup
  • Garnish – grilled pineapple
  • Rocks glass

METHOD

  1. Pineapple is first roasted in oven to dehydrate and increase sweetness
  2. Heat up long pepper on hob then muddle in pestle and mortar
  3. Add all ingredients in vac pack bag
  4. Add to sous vide at 70 degrees for 1 hour

INGREDIENTS

  • 50ml Coachbuilt
  • 20ml Floral honey infused with Indian Rose, Chamomile & Raspberry leaf
  • 25ml Acid Solution
  • 5ml Muyu Jasmine
  • Garnish – Viola flower
  • Glass – Coupette

METHOD

  1. Brew for 2mins in 100ml hot water 5gr lemon + ginger tea, 2.5gr Jasmine tea, 2.5gr chamomile
  2. Strain Tea leaves
  3. Add 150gr clear honey and mix

Sharp Turn

INGREDIENTS

  • 50ml Coachbuilt infused with Coriander seed
  • 40ml Grapefruit Oleo Saccharum
  • Top Soda
  • Glass – Highball
  • Garnish – Grapefruit Coin

METHOD

  1. Grapefruit Oleo Saccharum
  2. Peel 60 gr Grapefruit Skin (keep fruit to juice later) and place into kilner.
  3. Add 175gr Caster Sugar
  4. Add 25ml of Vodka
  5. Press grapefruit after 1st hour to release oils from skins.
  6. Leave for 24 hours until sugar has dissolved into sherbet
  7. Add 175ml Grapefruit Juice
  8. Mix all ingredients then strain (keep skins to the side)

Halo Highball

INGREDIENTS

  • 35ml Coachbuilt Whisky
  • 65ml Strawberry, White Wine, Pink Peppercorn
  • 100ml Water

RECIPE FOR STRAWBERRY WHITE WINE

  • 750g Strawberries cut up
  • 750ml Sauvignon Blanc Wine
  • 15g Pink Peppercorn
  • 15g Citric Acid
  • 70g Caster Sugar

METHOD

  • Infuse in the fridge for 12 hours or Sous Vide at 60 degrees for 2 hours.
  • Strain and Bottle
